化学的に合成された肥料や農薬の使用を避け、自然に配慮して農作物を栽培すること、そしてそれによってつくられた製品全般のことを指す。本来の意味は、「有機体の」「生物の」という形容詞。有機JAS、BDIH、ソイルアソシエーション、コスモス、ネイトゥルーなど、野菜からコスメ、コットンまでさまざまな認証、有機認証が存在するが、その定義は個々で異なるため、どこまでをオーガニックと判断するかは困難である。
